Taste the Season: Soul-Warming Meals for Winter Escapes

There’s something extra comforting about cooking in the great outdoors during winter -steam rising from a simmering pot, toasty hands around a mug, and that irresistible aroma of campfire fare. Whether you’re parked by the beach or nestled in a forest clearing, your holiday can be a feast for the senses.

Toast marshmallows and warm your toes at our parks with communal firepits like Yallingup Caves and Merimbula. Prefer to BYO?  You’re welcome to bring your own firepit to  Kiola Beach, Merool on the Murray, or South Bright. If you’re travelling light, no worries – hire a firepit on-site at  Kiola Beach, South Bright or Merool, and still enjoy that fireside glow under the stars.

Start your evening with a Pan-Fried Camembert, golden and gooey, topped with blistered cherry tomatoes, toasted walnuts, and a drizzle of honey. Pair it with crusty bread and you’ve got a snack that’s both rustic and indulgent.

For mains, it’s hard to beat a classic Beef & Red Wine Stew cooked low and slow over a hotplate or firepit. Packed with hearty veg, herbs, and rich red wine, it’s the perfect winter warmer to share around the fire. Just remember: the wine goes in the stew – not just in your glass (though we won’t judge if a little goes both ways).

Prefer something quick and creamy? Try a One-Pot Gnocchi with Spinach & Ricotta. No draining, no fuss—just a bubbling pan of buttery garlic, pillowy gnocchi, wilted greens, and spoonsful of ricotta for that dreamy finish.

Round off the night with something sweet and simple. Toast up Nutella Pockets – crispy, gooey tortilla treats with banana, cinnamon sugar, or whatever toppings you love. Or dip marshmallows into melted dark chocolate, then sprinkle with sea salt or pistachios for a fireside dessert that’s fun and messy in all the right ways.

Or if you’d prefer something savoury and no-fuss, why not enjoy a cheese platter with some local wine? It’s the perfect conversation starter – just add cured meats, crackers, and a view. Whether you’re sharing stories by the fire or relaxing on the deck as the sun goes down, it’s a simple, satisfying way to toast the season.

This winter, your park kitchen is more than a convenience – it’s the heart of your holiday.
